A buttery croissant can turn an ordinary breakfast into something special without requiring complicated cooking.
This savory croissant breakfast sandwich combines a crisp, toasted croissant with soft scrambled eggs, crisp meat, and melted sharp cheddar cheese.

Ingredients
6 croissants, halved
6 slices meat
2 tablespoons unsalted butter
8 eggs
¼ cup half-and-half
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper
6 slices extra-sharp cheddar cheese
Preparation Time
Prep time: 15 minutes
Cook time: 10 minutes
Servings: 6 sandwiches
Instructions
1. Preheat the oven to 350°F. Line a rimmed baking sheet with parchment paper.
2. Slice each croissant horizontally and arrange the halves on the prepared baking sheet. Toast them in the oven for 5–10 minutes, watching carefully so they become golden without becoming overly crisp.
3. Cook the meat in a skillet or in the oven until crisp. Set it aside once cooked.
4. Melt the butter in a skillet over high heat until bubbly. Meanwhile, put the eggs into a bowl, add the half-and-half, season with salt and black pepper, and whisk until combined.
5. Pour the egg mixture into the hot skillet. Immediately reduce the heat to medium and gently move the eggs around with a rubber spatula. Continue stirring until the eggs are cooked but still soft.
6. Place one slice of cheddar cheese on the bottom half of each toasted croissant.
7. Add one slice of crisp meat over the cheese.
8. Divide the soft scrambled eggs evenly among the six croissants.
9. Return the assembled sandwich halves to the oven and bake for 10–15 minutes, or until the cheese melts and the croissants become golden.
10. Place the top halves of the croissants over the fillings, slice if desired, and serve while warm.
What Makes It Work
The appeal of this sandwich comes from the contrast between its components. A croissant brings a delicate, flaky exterior and a buttery interior, while the eggs provide a soft texture. Crisp meat adds a firmer bite, and melted cheddar brings creaminess and a noticeable savory flavor.
To keep the eggs tender, avoid cooking them until they become completely firm in the skillet. The original method removes them from the heat while they still look slightly soft, allowing the second round of oven heating to finish the cooking.

Easy Ways to Prepare Ahead
The finished sandwiches can be kept in an airtight container in the refrigerator for one to two days. For longer storage, the assembled sandwiches can be wrapped tightly and frozen for up to three months, according to the original recipe.
For reheating, a microwave can warm the filling quickly, while a toaster oven or air fryer can help restore some crispness to the croissant. This two-step approach is useful because pastry can lose some of its texture during refrigeration or freezing.
Simple Customization
The basic combination can also be adjusted without changing the overall method. Another melty cheese can replace cheddar, while the eggs can be cooked more firmly if preferred. For a different texture, the eggs can also be shaped into small portions before assembly.

For breakfast gatherings, preparing the croissants and fillings in batches can make serving easier. Each sandwich can be assembled with the same basic combination, or guests can choose their preferred cheese and egg style.
A croissant breakfast sandwich offers a straightforward way to make breakfast feel more substantial while keeping the preparation manageable. With a short preparation time and options for refrigeration or freezing, it can fit both leisurely mornings and busier schedules. The key is to toast the croissants carefully and keep the scrambled eggs soft before the final warming step.
