Brown Butter Apple and Blackberry Bars

Ingredients:
For the brown butter mixture:
200g unsalted butter
150g caster sugar
60g brown sugar
1 tsp vanilla extract
2 large eggs
250g plain flour
1 tsp baking powder
½ tsp fine salt
For the fruit layer:
3 medium apples, peeled, cored and thinly sliced
200g blackberries
2 tbsp caster sugar
1 tbsp lemon juice
1 tsp cornflour
For the topping:
60g plain flour
50g rolled oats
40g brown sugar
50g unsalted butter, melted
A pinch of salt
Prepare the Brown Butter
Start by browning the butter, which gives the bars their distinctive flavour. Melt the butter in a saucepan over medium heat, stirring regularly until the milk solids turn golden and the butter develops a nutty aroma.
Remove from the heat and allow it to cool slightly. Browning the butter adds depth and a caramel-like richness that works particularly well with apples and berries.
In a large bowl, combine the browned butter with both sugars and vanilla extract. Add the eggs and mix until smooth.
Create the Batter and Fruit Layer
Mix the flour, baking powder and salt separately, then gradually add the dry ingredients to the butter mixture. Stir until a thick batter forms.
Line a baking tin with baking paper and spread the mixture evenly across the base.
For the fruit filling, combine the sliced apples and blackberries with sugar, lemon juice and cornflour. The cornflour helps absorb some of the fruit juices during baking, preventing the bars from becoming too wet.
Spread the fruit mixture over the batter, making sure the apples and berries are evenly distributed.
Add the Crumble Topping
Prepare the topping by combining flour, oats, brown sugar and salt. Add the melted butter and mix until the mixture forms small clumps.
Scatter the crumble evenly over the fruit layer. This creates a crisp golden surface that contrasts with the soft fruit beneath.
Bake until the top is golden and the fruit is tender. The exact timing will depend on the size and depth of the baking tin, but the bars are usually ready after around 45–50 minutes.
Cool and Serve
Allow the dessert to cool completely before cutting into squares. This helps the layers set and makes slicing easier.
The bars can be served on their own or with a spoonful of yoghurt for a lighter finish. They are also suitable for preparing ahead, as the flavours become even more developed after resting.
