Grilled Sardines with Blackberry Escabeche

Ingredients:
16 fresh sardines, cleaned
2 tbsp olive oil
Sea salt
Freshly ground black pepper
For the blackberry escabeche:
150g fresh blackberries
100ml vinegar
100ml extra-virgin olive oil
1 small red onion, thinly sliced
2 garlic cloves, finely chopped
1 bay leaf
A few sprigs of fresh thyme
1 tsp honey or sugar
A pinch of chilli flakes, optional
To serve:

Crusty bread
Lemon wedges
Cooking the Sardines
Sardines are best cooked simply to highlight their natural flavour.
Pat the cleaned fish dry, then season with sea salt and black pepper. Brush lightly with olive oil before grilling.
