Preparing the Sponge

Cake flour is then folded in gently. Avoid mixing too aggressively because excessive stirring can remove some of the air created during whipping. Instructions
1. Preheat the oven to 170°C. Line the bottom of an 18 cm round cake pan with parchment paper. Whip the eggs and sugar until pale, thick, and fluffy. Sift in the cake flour and gently fold until combined.
2. Melt the butter with the milk, then mix in the vanilla. Add a small amount of the cake batter to this mixture, stir gently, and fold it back into the remaining batter.
3. Pour the batter into the prepared pan and bake for 25–30 minutes, or until the center springs back lightly when touched. Allow the cake to cool completely before removing it from the pan.
4. Whip the cream with the powdered sugar until it reaches a smooth, spreadable consistency. Slice the strawberries, keeping a few attractive pieces aside for decoration.
5. Cut the cooled sponge horizontally into two or three layers. Spread a thin layer of strawberry jam and whipped cream over the first layer, then arrange sliced strawberries on top.
6. Add another cake layer and repeat the filling. Cover the top and sides with the remaining whipped cream, then decorate with the reserved strawberries.
7. Refrigerate the finished cake for at least 30 minutes before slicing. Serve chilled for the best texture.

The whipped cream should be firm enough to spread but still soft and smooth. Over-whipping can make the cream grainy and difficult to spread evenly. For a clean finish, chill the mixing bowl and beaters before whipping the cream. This can help the cream remain cool as it thickens.
