Nachos are one of those dishes that work just as well for a casual dinner as they do for sharing with friends. This version keeps things simple but adds enough texture and freshness to make every bite interesting.
The corn is charred until slightly smoky, the black beans are fried until they start to crisp, and lime, coriander and jalapeño bring brightness to the whole dish.
The best part is how easily the recipe adapts to whatever you already have in the kitchen.

What You’ll Need
2 ears of corn, kernels sliced from the cobs
2 tbsp vegetable oil
200 g canned black beans, drained and rinsed
½ tsp cumin seeds, lightly crushed
Sea salt and black pepper
2 limes
½ bunch coriander, finely chopped
2 jalapeños or green chillies, finely chopped with seeds and pith removed
200 g tortilla chips
75 g grated mozzarella
100 g mature cheddar, grated
Soured cream, for serving
1. Char the Corn
Place a large frying pan over high heat.
Add the corn kernels directly to the dry pan and cook for about 5–10 minutes.
Stir occasionally, but give the kernels enough time against the hot surface to develop dark, charred spots.
This step gives the corn a deeper, slightly smoky flavor and makes the finished salsa much more interesting than simply using raw or boiled corn.
Once the kernels are well colored, transfer them to a large bowl.
2. Crisp the Beans
Pour the vegetable oil into the same frying pan.
Add the black beans and crushed cumin seeds, then season generously with salt and black pepper.
Cook over high heat for around 5 minutes.
The beans should begin to crisp around the edges and may pop slightly in the pan.
Do not rush this step: the contrast between crisp beans, juicy corn and melted cheese is what gives these nachos their texture.
Add the beans to the bowl with the corn.
3. Make the Corn Salsa
Finely grate the zest of one lime into the bowl.
Squeeze in the juice of one and a half limes.
Add most of the chopped coriander and most of the jalapeño.
Toss everything together until the corn and beans are evenly coated.
Taste before moving on.
Add a little more salt or lime juice if the mixture needs extra sharpness.
The salsa should taste bright and punchy because it needs to balance the richness of the cheese later.
4. Melt the Cheese
Heat the grill to high.
Spread the tortilla chips across a baking tray in a reasonably even layer.
Scatter both cheeses over the top, making sure the chips are covered rather than leaving all the cheese in the center.
Place the tray under the grill for a couple of minutes.
Watch carefully.
You want the mozzarella and cheddar completely melted and bubbling, but not burnt. If the top begins to brown too quickly, switch off the heat and let the remaining warmth finish melting the cheese.
5. Finish the Nachos
Transfer the cheesy nachos to a large serving platter. Spoon the charred corn and black bean mixture over the top. Add small spoonfuls of soured cream, then finish with the remaining coriander and jalapeño. Serve immediately while the cheese is still warm and stretchy.

Make Them Your Own
This recipe is deliberately flexible. Fresh chopped tomatoes can add extra juiciness, while guacamole makes the dish richer and more filling. If you enjoy stronger spices, add sweet smoked paprika or lightly crushed coriander seeds to the beans while they cook.
For children or anyone sensitive to heat, simply reduce the jalapeño. Think of the recipe as a base rather than a strict formula: keep the charred corn, beans, lime and melted cheese, then adjust everything else to suit your taste.
The result is fast, colourful and ideal for sharing — especially when dinner needs to feel relaxed rather than complicated.
