150 g all-purpose flour
2 tablespoons cornstarch
2 large eggs
450 ml kombu dashi
1 tablespoon soy sauce
1 teaspoon salt
2 tablespoons green onions, finely sliced
100 g cooked mushrooms, finely chopped
2 tablespoons pickled ginger, finely chopped
1 tablespoon neutral cooking oil
3 tablespoons takoyaki sauce
2 tablespoons Japanese mayonnaise
1 tablespoon dried seaweed flakes
1 tablespoons sesame seeds

Prepare the Batter
1. The batter should be thin and smooth rather than thick like pancake batter. This helps create the soft texture that makes takoyaki so enjoyable.
2. In a large bowl, whisk the eggs, kombu dashi, soy sauce, and salt. Slowly add the flour and cornstarch while continuing to whisk. Mix until the ingredients are well combined. A few small lumps are fine, so there is no need to keep mixing for too long.
3. Stir in half of the green onions. Set the remaining onions aside for later. Let the batter rest for a few minutes while the filling is prepared.
Prepare the Filling
1. Finely chop the cooked mushrooms and pickled ginger. The pieces should be small enough to fit comfortably inside each section of the pan.
2. Having the filling, batter, oil, and toppings ready before cooking is helpful. Takoyaki needs regular turning while it cooks, so keeping everything within easy reach makes the process less stressful.
Instructions
1. Place a takoyaki pan over medium heat and let it warm evenly.
2. Brush each round section with cooking oil, making sure the sides are lightly coated.
3. Pour batter into each section until nearly full. Some batter may flow between the sections, which is fine.
4. Add a small amount of chopped mushrooms and pickled ginger to each section.
5. Sprinkle some of the remaining green onions over the batter.
6. Cook until the bottom and edges begin to firm up.
7. Use takoyaki picks or small wooden skewers to loosen the batter around each section.
8. Gently turn each piece about a quarter turn.
9. Allow the uncooked batter to move into the open space as the pieces are turned.
10. Continue turning the pieces gradually until they become round and evenly golden.
11. Cook until the outside is lightly crisp and the center is cooked through.
12. Transfer the takoyaki to a serving plate.
13. Drizzle takoyaki sauce and Japanese mayonnaise over the top.
14. Sprinkle with dried seaweed flakes and sesame seeds.
15. Serve warm.
Tips for Making Takoyaki
The turning process is usually the part that takes the most practice. Avoid trying to flip the pieces before the bottom has become firm. If they are still very loose, give them more time to cook before loosening the edges.
Do not be concerned if the first few pieces are not perfectly round. As the batter cooks, use the picks to tuck loose edges toward the center. Turning the pieces little by little makes it easier to shape them.
Oil is also important. A lightly coated pan helps the batter release more easily and gives the outside a better golden finish. If the pieces begin sticking, add a small amount of oil before continuing.
Easy Ways to Customize It
The filling can be adjusted without changing the basic batter. Finely chopped cooked vegetables can be used in place of mushrooms, as long as they are not too large or watery. The toppings can also be changed to suit different tastes. Extra green onions add freshness, while additional sesame seeds give the finished snack a pleasant texture. For a stronger flavor, a little more takoyaki sauce can be added just before serving.

Making takoyaki at home is easier once the batter and fillings are prepared ahead of time. The recipe uses straightforward ingredients, while the cooking technique mainly comes down to patience and gentle turning.
