Welcome, Lykkers! Fresh asparagus salad is one of those simple dishes that can make a meal feel instantly brighter. Crisp asparagus, sweet green peas, crunchy radishes, salty feta, and toasted pine nuts come together with a light lemon-garlic dressing. The result is fresh, colorful, and full of contrasting textures.
The asparagus is briefly blanched rather than fully cooked, allowing it to stay tender while retaining its vibrant green color and slight crunch. Served chilled or at room temperature, this salad makes an excellent side dish for lunch, dinner, picnics, or warm-weather gatherings.
Ingredients
For the Salad
- 2 bunches fresh asparagus, tough ends removed and tender parts cut into 1-inch pieces
- 1 cup frozen green peas, thawed
- 3 radishes, thinly sliced
- ⅓ cup crumbled feta cheese
- ¼ cup pine nuts
- Fresh mint or basil leaves, for garnish
For the Lemon-Garlic Dressing
- 2 tablespoons extra-virgin olive oil
- 1½ tablespoons fresh lemon juice
- ½ garlic clove, finely grated
- ½ teaspoon sea salt
- ¼ teaspoon freshly ground black pepper, or to taste

Step-by-Step Instructions
Step 1: Prepare the Asparagus
- Wash the asparagus thoroughly under cool running water.
- Trim away the tough. The easiest way to determine where to cut is to bend each stalk gently; the tougher bottom portion will naturally snap away from the tender section.
- Cut the remaining asparagus into pieces approximately 1 inch long.
- Prepare a large bowl of ice water and set it near the stove before cooking the asparagus.
Step 2: Blanch the Asparagus
- Bring a large saucepan of salted water to a rolling boil.
- Carefully add the asparagus pieces and cook for approximately 1 minute.
- The asparagus should become slightly tender while remaining bright green and crisp. Avoid cooking it for too long because the salad benefits from a firm texture.
- Immediately remove the asparagus with a slotted spoon or drain it in a colander, then transfer it directly into the ice water.
- Let the asparagus sit in the ice bath for about 1 minute. This stops the cooking process and helps preserve its vibrant color.
- Drain thoroughly and spread the asparagus over a clean kitchen towel. Pat gently to remove excess water.
Step 3: Prepare the Lemon-Garlic Dressing
- In a small bowl, combine the extra-virgin olive oil, fresh lemon juice, grated garlic, sea salt, and black pepper.
- Whisk until the ingredients are well combined.
- Taste the dressing and adjust it according to preference. More lemon juice can provide extra brightness, while a little additional olive oil will soften the acidity.
Step 4: Combine the Vegetables
- Place the cooled asparagus in a large mixing bowl.
- Add the thawed green peas and gently toss them together.
- Pour the lemon-garlic dressing over the vegetables and toss carefully until the asparagus and peas are evenly coated.
- Allowing the vegetables to sit with the dressing for a few minutes gives the flavors time to mingle.
Step 5: Add the Fresh Toppings
- Transfer the dressed asparagus and peas to a serving platter or large salad bowl.
- Arrange the thinly sliced radishes over the top.
- Scatter the crumbled feta cheese across the salad. Its salty, tangy flavor adds a creamy contrast to the fresh vegetables.
- Finish with the pine nuts and a handful of fresh mint or basil leaves.
Step 6: Toast the Pine Nuts for Extra Flavor
- To make the pine nuts even more flavorful, place them in a dry skillet over medium-low heat.
- Toast for approximately 2–4 minutes, stirring or shaking the pan frequently. Remove them as soon as they become lightly golden and fragrant.
- Let them cool for a few minutes before scattering them over the salad.
- Keep a close eye on the pine nuts because they can go from lightly toasted to burnt surprisingly quickly.

Fresh asparagus salad is proof that a handful of well-prepared ingredients can create something memorable. Briefly blanching the asparagus preserves its crisp texture and vibrant color, while peas add sweetness and radishes bring a refreshing crunch. Feta and pine nuts provide richer, savory notes, and the simple lemon-garlic dressing keeps everything lively. It is an easy salad to prepare, yet the combination of colors, textures, and flavors makes it suitable for both everyday meals and special gatherings.
