Ingredients
For 2 servings:
• 1 tbsp olive oil
• 2 red onions, chopped
• 1 red chilli, deseeded and finely chopped
• 1 garlic clove, sliced
• Small bunch coriander, stalks and leaves separated and chopped
• 2 cans cherry tomatoes
• 1 tsp caster sugar
• 4 eggs
Method
1. Prepare the sauce
Heat the olive oil in a frying pan with a lid. Add the chopped onions, chilli, garlic, and coriander stalks. Cook gently over medium heat for about 5 minutes until the vegetables soften and release their aromas. Stir in the cherry tomatoes and sugar, then allow the mixture to simmer for 8–10 minutes, uncovered, until it thickens into a rich sauce. The sauce can be prepared in advance and frozen for up to a month, making it a convenient base for future meals.
2. Poach the eggs
Use the back of a large spoon to create 4 small dips in the thickened sauce. Place one egg into each depression. Cover the pan with a lid and cook on low heat for 6–8 minutes, or until the eggs reach your preferred level of doneness. The slow cooking ensures the whites set while the yolks remain luscious and creamy.
3. Garnish and serve
Once the eggs are cooked, scatter the chopped coriander leaves over the top for freshness and an extra pop of color. Serve immediately with crusty bread, sourdough, or pitta for dipping into the sauce and yolk. For a more elaborate meal, you can complement the shakshuka with a side salad or a meze-style board.
