Ingredients Needed for a 6-Inch Cake

Mango Jelly (Center Filling):
- 100g water
- 10g fine sugar
- 8g honey
- 4g gelatin
- ½ mango, diced into small cubes
Biscuit Base:
- 80g Oreo or grandma's cookies, crushed
- 30g unsalted butter, melted
Cheese Mousse Layer:
- 150g cream cheese, room temperature
- 50g fresh mango juice
- 150g whipping cream
- 50g sugar
- 10g lemon juice
- Zest from ½ lemon
- 6g gelatin
Mango Jelly Top Layer:
- 100g mango puree
- 20g sugar
- 3g gelatin
Step 1: Making the Mango Jelly Center
1. Soften 4g gelatin in 1 tablespoon of water for 5 minutes.
2. In a small saucepan, combine 100g water, 10g sugar, and 8g honey. Heat on low until the sugar dissolves.
3. Add the softened gelatin and stir until completely dissolved. Let it cool to room temperature.
4. Line a 4-inch mold with plastic wrap. Place the diced mango cubes inside.
5. Pour the cooled jelly mixture over the mango cubes. Refrigerate for at least 8 hours or overnight until fully set.
Step 2: Preparing the Biscuit Base
1. Crush 80g cookies into fine crumbs using a blender or rolling pin.
2. Melt 30g butter in the microwave for 20–30 seconds. Mix it into the cookie crumbs until evenly combined.
3. Press the mixture firmly into the bottom of the 6-inch cake mold. Use the back of a spoon to flatten and compact it.
4. Refrigerate for 20 minutes to set the base.
Step 3: Preparing the Cheese Mousse
1. Soften 6g gelatin in 1 tablespoon of water for 5 minutes.
2. In a mixing bowl, beat 150g cream cheese with 50g sugar until smooth.
3. Add 50g mango juice and mix well. Place the bowl over warm water and stir until silky.
4. Pour the melted gelatin into the cream cheese mixture and stir thoroughly.
5. Whip 150g cream until it reaches soft peaks (about 60% whipped). Fold it gently into the cheese mixture.
Step 4: Assembling the Cake
1. Take the chilled biscuit base from the fridge. Pour half of the cheese mousse over it. Refrigerate for 15 minutes until slightly firm.
2. Remove the mango jelly center from the smaller mold and place it gently on top of the first cheese layer.
3. Pour the remaining cheese mousse over the mango jelly. Refrigerate for another 20 minutes.

Step 5: Making the Mango Jelly Top Layer
1. Soften 3g gelatin in 1 tablespoon water for 5 minutes.
2. In a small saucepan, heat 100g mango puree with 20g sugar until the sugar dissolves. Remove from heat.
3. Add the softened gelatin and stir thoroughly. Let the mixture cool to room temperature.
4. Gently pour the cooled jelly over the top of the cake. Refrigerate for at least 4 hours or overnight to set completely.
Step 6: Final Tips for Perfect Results
- If the mango puree is too thick, we can add a small amount of water and blend it until smooth. We need enough puree for both the mousse and top jelly.
- Always let the jelly cool before pouring; hot jelly can melt the layers underneath and affect the cake’s appearance.
- Use a plastic wrap or acetate sheet around the cake mold for easy removal and clean edges.
