A tin of beans might not sound like the most exciting starting point for dinner, but a few clever ingredients can transform it into something surprisingly delicious. Imagine tender white beans coated in a creamy, garlicky sauce, finished with crunchy breadcrumbs and freshly grated Parmesan.
Inspired by the bold flavours of a classic Caesar salad, this warm skillet dish replaces lettuce with hearty beans. It is inexpensive, satisfying and ideal for evenings when you want a homemade meal without spending hours in the kitchen.

Why This Simple Dish Works
The secret lies in creating contrast. White beans have a mild flavour and naturally creamy texture, making them perfect for absorbing stronger seasonings. Anchovies add savoury depth without making the dish taste particularly fishy, while Dijon mustard and lemon introduce pleasant sharpness.
Golden breadcrumbs provide the crunch usually associated with Caesar croutons. A little Parmesan brings everything together, creating a comforting meal that feels far more interesting than its modest ingredients suggest.
Ingredients You'll Need
Servings: 2
Preparation time: 10 minutes
Cooking time: 15 minutes
Total time: 25 minutes
Difficulty: Easy
1 × 400g tin cannellini beans, drained and rinsed
3 tablespoons olive oil
50g panko breadcrumbs
2 garlic cloves, finely chopped
3 anchovy fillets, finely chopped
1 tablespoon capers, drained
½ teaspoon Dijon mustard
Zest and juice of ½ lemon
25g Parmesan, finely grated
100–150ml water
A pinch of chilli flakes
Salt and freshly ground black pepper
Fresh parsley, to serve (optional)
Make The Golden Breadcrumbs
Heat one tablespoon of olive oil in a large frying pan over a medium heat. Add the breadcrumbs and stir regularly for approximately three to four minutes until golden and crisp.
Season lightly with salt and transfer them to a separate bowl. Set aside while preparing the beans.
Avoid leaving the breadcrumbs in the hot pan, as they can burn quickly.
Build A Rich Caesar Sauce
Add the remaining olive oil to the same frying pan. Stir in the garlic, anchovies and capers, cooking gently for one to two minutes until fragrant.
The anchovies should begin breaking down into the oil, creating a savoury base.
Add the mustard, lemon zest and chilli flakes, followed by the drained beans and water. Stir carefully, then simmer for approximately five minutes.
Lightly crush a few beans against the pan to thicken the sauce naturally. Add more water if the mixture becomes too thick.
Finish With A Fresh Twist
Remove the pan from the heat and stir in the lemon juice and most of the Parmesan. Taste before adding salt, as the anchovies, capers and cheese already provide plenty of seasoning.
Spoon the warm beans into shallow bowls and scatter over the golden breadcrumbs. Finish with the remaining Parmesan, black pepper and chopped parsley.
Serve immediately while the topping remains crisp.
Easy Ways To Make It Better
For a vegetarian version, omit the anchovies and use vegetarian hard cheese, adding a little extra Dijon mustard for flavour.
The beans are also delicious spooned over sautéed spinach or served alongside toasted sourdough.
If preparing ahead, refrigerate the beans and store the breadcrumbs separately.

A New Weeknight Favourite
These creamy Caesar-style beans prove that everyday cupboard ingredients can become an impressive dinner. With their combination of bright lemon, savoury cheese and crunchy breadcrumbs, they offer plenty of flavour with minimal effort.
