French onion soup is loved for its mellow sweetness, rich broth, and tender onions. A vegetarian version can deliver plenty of flavor without relying on meat-based stock.
With slowly softened onions, fresh parsley, and a few everyday kitchen staples, this soup makes a satisfying meal for a quiet evening or a relaxed lunch. The key is to give the onions enough time to develop their natural sweetness before adding the liquid.

Ingredients
700 g onions, thinly sliced
2 tablespoons olive oil
30 g unsalted butter
2 garlic cloves, finely chopped
1 tablespoon plain flour
1 litre vegetable stock
1 small bunch fresh parsley, finely chopped
1 bay leaf
1 teaspoon fresh thyme leaves, or a small pinch of dried thyme
Salt, to taste
Black pepper, to taste
4 slices crusty bread, for serving
60 g grated vegetarian hard cheese, optional
Servings: 4
Preparation time: 15 minutes
Cooking time: 45–55 minutes
Instructions
1. Prepare the ingredients. Peel and thinly slice the onions. Finely chop the garlic and parsley, and remove the thyme leaves from their stems if using fresh thyme.
2. Heat the oil and butter. Place a large, heavy-bottomed saucepan over medium-low heat. Add the olive oil and butter, allowing the butter to melt gently.
3. Cook the onions slowly. Add the sliced onions and a small pinch of salt. Stir to coat them evenly, then cook for 25–35 minutes, stirring regularly, until they are soft and golden. Reduce the heat as needed to prevent burning, adding a splash of water if the onions begin sticking to the pan.
4. Add the garlic and herbs. Stir in the chopped garlic and thyme. Cook for approximately one minute until fragrant, taking care not to let the garlic brown too much.
5. Incorporate the flour. Sprinkle the plain flour evenly over the onions. Stir continuously for about one minute so the flour coats the ingredients and cooks through.
6. Pour in the vegetable stock. Add a small amount of stock first, stirring well to dissolve the flour and loosen any browned bits from the bottom of the pan. Gradually pour in the remaining stock, then add the bay leaf.
7. Simmer the soup. Bring the mixture to a gentle simmer. Cook uncovered for 15–20 minutes, stirring occasionally, until the onions are tender and the broth develops a rich, savory flavor.
8. Season to taste. Remove the bay leaf. Add black pepper and adjust the salt gradually, tasting the soup before adding more.
9. Stir in the parsley. Add most of the chopped parsley during the final minute of cooking. Stir well to distribute the fresh herbal flavor throughout the soup.
10. Prepare the bread. Toast the crusty bread until crisp. For an optional topping, sprinkle with vegetarian hard cheese and allow it to melt under a suitable grill, watching carefully to prevent burning.
11. Serve warm. Ladle the soup into warmed bowls and garnish with the remaining parsley. Serve immediately with toasted bread on the side or placed on top.

Vegetarian French onion and parsley soup shows how a handful of familiar ingredients can create a deeply satisfying dish. Slowly cooked onions bring sweetness, vegetable stock supplies a savory base, and parsley adds freshness at the finish. Take your time with the onions, season carefully, and serve the soup warm with crisp bread for a comforting meal that is simple enough to prepare at home.
