Hot summer evenings call for a different kind of cooking. Instead of heating the entire kitchen, rely on ready-cooked ingredients, fresh vegetables, bread and bold dressings.
With a kettle, a fridge and a few pantry staples, You can put together a proper meal without standing over the stove.

1. Tomato Toasts
Start with good bread and ripe tomatoes. Toast the bread if You are happy to use a toaster, then rub it lightly with garlic. Add a drizzle of olive oil and spoon grated tomato over the top. Finish with salt and, if You like, a few tinned anchovies.
The result is simple but full of flavour, especially when the tomatoes are sweet and juicy. Tip: choose the ripest tomatoes You can find. In a dish this simple, they make all the difference.
2. Focaccia With Crab
For something a little more substantial, use ready-made focaccia as the base.
Mix brown crab meat with mayonnaise, lemon juice and mustard, then spread it over the bread. In another bowl, combine white crab meat with chopped chives and coriander, a little crème fraîche and black pepper. Stir in some sweetcorn, spoon it over the first layer and finish with watercress.
It feels much more impressive than the amount of effort involved.
3. Cold Noodles With Peanut Dressing
Rice noodles are perfect for hot weather because many varieties only need soaking in hot water. While they soften, make a dressing with peanut butter, miso, tahini, sesame oil, garlic and lime juice. Rice vinegar also works well if You do not have lime. Drain the noodles, mix them with the dressing and add ready-cooked prawns.
For freshness and crunch, add smashed or roughly chopped cucumber. Tip: chill the finished noodles before serving. They become even more refreshing after some time in the fridge.

4. Salmon Rice Bowls
Ready-cooked rice can become the base of an easy summer dinner.
Roughly chop a cucumber and place it in a container with soy sauce, lemon juice, sesame oil, fish sauce and a spoonful of chilli crisp. Close the lid, shake well and leave it in the fridge to marinate. Then build the bowl with cold rice, smoked salmon and the cucumber mixture.
Finish with sesame seeds, fresh coriander and a little lime juice. The combination of cool rice, salty salmon and sharp, spicy cucumber makes this especially good on very hot days.
5. Courgette Ribbons With Pesto
Pesto does not always need pasta. Make a quick version using walnuts instead of pine nuts. Blend them with basil or flat-leaf parsley, a firm cheese, garlic, lemon juice and olive oil. Use a vegetable peeler to slice raw courgettes into thin ribbons, then toss them with the pesto and leave them briefly to absorb the flavour.
Add torn mozzarella and freshly ground black pepper before serving. You can also add something sweet and sharp, such as a few pickled raisins, for extra contrast.
6. The Ultimate Assembly Dinner
When even soaking noodles feels like too much work, build dinner straight from the fridge and pantry. Keep jars of artichokes, olives, capers and roasted peppers on hand. Combine them with ready-cooked lentils from a pouch or tin, then crumble feta over the top.
Add olive oil, lemon juice and black pepper, and You have a filling meal in minutes. This kind of dinner is endlessly flexible. Fresh tomatoes, cucumber, leftover herbs or canned beans can all join the bowl.
Keep Summer Cooking Simple
The easiest hot-weather meals usually follow the same formula: one filling base, something fresh, something salty or creamy and a strong dressing.
Bread, rice, noodles, lentils, cheese, smoked fish and prepared seafood can all do the heavy lifting, while cucumbers, tomatoes and herbs keep everything light.
The goal is not to avoid proper food in hot weather. It is to build meals that feel complete without making the kitchen even hotter. With the right ingredients ready to go, dinner can stay cool, fresh and surprisingly satisfying.
