Hello Lykkers, today we are making a comforting bowl of spicy miso ramen together. This Japanese-style noodle dish combines springy ramen noodles, a rich miso soup base, soft tofu, fresh vegetables, and a gentle spicy flavor.
Every spoonful brings together deep savory notes, fresh aromas, and a warm feeling that makes it perfect for a relaxing meal.
We love this recipe because it does not require complicated cooking skills. By preparing each ingredient carefully and following simple steps, we can create a restaurant-style ramen experience in our own kitchen. The key is building the soup flavor slowly, allowing the miso, ginger, garlic, and chili sauce to blend beautifully.

What Makes Spicy Miso Ramen Special
Spicy miso ramen is known for its rich and flavorful soup. The main ingredient, red miso paste, gives the broth a deep taste and smooth texture. Ginger and garlic add a fresh fragrance, while chili sauce creates a pleasant spicy touch.
The noodles absorb the flavorful soup, while tofu, bean sprouts, green onions, and seaweed add different textures. The combination creates a balanced dish with warmth, freshness, and satisfying flavors.
This recipe makes 2 servings, making it a great choice for a cozy dinner or a weekend homemade meal.
Ingredients We Need
Before cooking, we prepare all ingredients. Having everything ready helps us enjoy the cooking process more easily.
Main Ingredients:
- Ramen noodles: 2 portions (about 180-200g total)
- Firm tofu: 1 cup (about 150g), cut into small cubes
- Bean sprouts: 1 cup (about 80g), washed and drained
- Green onions: 2 stalks, thinly sliced
- Seaweed sheets: 2 pieces, cut into small strips
- Soft boiled eggs: 2, optional topping
For The Soup Base:
- Vegetable oil: 1 tablespoon
- Garlic: 3 cloves, finely chopped
- Fresh ginger: 1 tablespoon, finely grated
- Red miso paste: 3 tablespoons
- Soy sauce: 2 tablespoons
- Chili sauce: 1-2 tablespoons, adjust according to personal taste
- Vegetable or chicken soup base: 4 cups (about 950ml)
- Sesame oil: 1 teaspoon, optional for extra aroma
Step 1: Prepare The Ingredients
First, we prepare all ingredients before turning on the heat.
1. Cut the tofu into small cubes about 2cm wide. Place them on a plate and set aside.
2. Wash the bean sprouts and drain away extra water.
3. Slice the green onions into thin pieces.
4. Cut the seaweed sheets into small strips.
5. If we choose to add soft boiled eggs, prepare them in advance and cut them in half before serving.
Step 2: Cook The Ramen Noodles
1. Fill a cooking pan with enough water and bring it to a gentle boil.
2. Add the ramen noodles and cook according to the package instructions, usually around 3-5 minutes depending on the noodle type.
3. Stir gently to separate the noodles while cooking.
4. Once the noodles become soft but still springy, drain them well.
5. Divide the noodles into two serving bowls.
Keeping the noodles separate from the soup helps them maintain a better texture.
Step 3: Create The Miso Soup Base
Now we build the main flavor of our ramen.
1. Heat 1 tablespoon of vegetable oil in a large cooking pan over medium heat.
2. Add the chopped garlic and grated ginger. Cook for about 1-2 minutes until the aroma becomes fresh and fragrant.
3. Add 3 tablespoons of red miso paste, 2 tablespoons of soy sauce, and 1-2 tablespoons of chili sauce.
4. Stir everything together for about 30 seconds, allowing the ingredients to combine.
5. Slowly pour in 4 cups of soup base while stirring gently.
6. Lower the heat and allow the soup to warm for about 5 minutes.
This step creates the rich and flavorful foundation of the dish.
Step 4: Add Tofu And Complete The Soup
1. Add the tofu cubes into the warm soup.
2. Let the tofu cook gently for around 10 minutes so it can absorb the flavors.
3. Taste the soup and adjust the seasoning if needed.
4. Add 1 teaspoon of sesame oil at the end for extra fragrance if desired.
The soup should have a balanced taste with a smooth miso flavor and a light spicy feeling.
Step 5: Assemble Our Ramen Bowls
Now we bring everything together.
1. Pour the hot miso soup over the prepared noodles in each bowl.
2. Make sure each serving includes tofu cubes and enough soup.
3. Add fresh bean sprouts on top.
4. Sprinkle sliced green onions over the noodles.
5. Add seaweed pieces around the bowl.
6. Place half a soft boiled egg on top if using.
The colorful toppings make the ramen look inviting and add different textures to every bite.

Useful Tips For Better Flavor
You can adjust the recipe to suit your taste—add more ginger or garlic for a stronger aroma, reduce the chili sauce for a gentler heat, and toss in extra toppings like mushrooms, corn, or cabbage for more color and fullness; choosing a vegetable soup base keeps it fully plant-based. The most important part is enjoying the process because a warm bowl of homemade ramen is as much about care as it is about ingredients.
